【奪命吐司, 一次發酵】
【材料】
260克日本高筋麵粉
3克即溶酵母
60克蛋液(1粒)
120克鮮奶
20克細糖
2克鹽
30克奶油
【做法】
1. 將所有材料放入麵包機里攪拌15分鐘(除了奶油)至麵糰混合。
2. 然後再加入奶油, 繼續攪拌至15分鐘至麵糰順滑混合。
3. 取出麵糰, 將麵糰分割成3等份, 並以擀麵棍擀卷2次,擺入塗油的烤盤裡,發酵至9分滿。
4. 送入預熱烤箱裡以170度烘烤40分鐘, 如麵包表面上色快, 亦可覆蓋上一張錫紙。
****450克吐司烤盤
【The Killer Toast】
For 450g loaf pan and just one proofing
[Ingredients]
260g Japanese bread flour
3g instant dry yeast
1 large egg (60g)
120g full cream milk
20g sugar
2g salt
30g butter
[Method]
1. Place all the ingredients (except butter) into the a breadmarker, let it knead for 15 minutes until all the ingredients come together . (First, add the wet ingredients, then followed by the dry ingredients)
2. When all ingredients come together, add in the melted butter, continue kneading until the dough is smooth and elastic for 15 minutes.
3. Divide the dough into 3 portions equally, then roll flat and roll up like swiss roll ( repeat twice). place it into greased loaf pan to have of proofing until the dough reaches 90% of height of pan.
4. Bake in preheated oven at 170 C for 40 minutes. (Cover bread surface with foil if it turns to brown color too fast)
