椰糖Kuih Kosui – Gula Melaka Kuih Kosui

食譜: 150g 粘米粉/Rice Flour 85g 木薯粉/Tapioca Flour 200g 椰糖/Gula Melaka 200ml 清水 /Plain Water 200ml 椰漿/Coconut milk 1tsp 鹼水/Lye Water

做法:

把椰糖切碎+200ml 清水在一個鍋子煮至糖溶解後加入椰漿攪拌再過濾。 把過濾好的椰糖漿加滿清水至1000ml 備用。 倒入其它材料攪拌均勻後就以中小火煮至有點濃稠即可。(必須不停攪拌) 預先把9』圓形蒸盆抹上一層薄薄的油放入蒸籠加溫備用。 倒入煮好的糊漿在蒸盆以水滾後以小火蒸20分鐘即可。 新鮮椰絲加一點鹽大火蒸5分鐘。 待kuih kosui 冷卻後脫模切塊沾上椰絲即可享用。

Steps:

Cut gula melaka into small pieces and add in 200ml of water into a pot and cook until it melted completely then add in coconut milk. Filter the gula melaka syrup then top up the gula melaka syrup with plain water until 1000ml. Add in the remaining ingredient into step 2 and mixed well. Bring to heat and cook with medium low heat until it is slightly thicken. (Must keep stirring to prevent sticking at the bottom) Lightly grease on the 9′ round steam tray and steam for a while. Pour in the mixture into the steam tray then steam with low heat for 20mins. Steam the shredded coconut with a pinch of salt for 5mins and set aside. Wait until the kuih is cold completely then can cut into your desire size and serve with shredded coconut.

Jenny’s 溫馨提醒/Tips:

我沒有小瓷杯所以就這樣用一大整盤蒸好再切塊吃。 我加了椰漿(椰糖跟椰漿是好朋友)所以味道真的很不錯也香。若不想使用椰漿就省略以清水代替也可以。

I don』t have small porcelain cup therefore I steam it with a 9′ round steam tray. I add in coconut milk to the original recipe, therefore smell very nice. You can replace the coconut milk with plain water too. Enjoy!
