早餐要吃得好, 午餐要吃得飽, 晚餐要吃得少,說得很好吧。 習慣了吃早餐, 所以早餐對我來說是非常的重要。 當然, 平時上班的日子, 早餐就是兩片麥片麵包加上一碗麥片就解決了, 只有在周末的日子有時間, 才花些心思準備豐富的早餐, 讓自己有活力的迎接一整天的挑戰。

Easy Breakfast Pancake 西式早餐煎餅

西式早餐煎餅, 很簡單的配上牛油和蜂蜜, 吃得很有滿足感。 只要平底鍋煎就可以了, 不用用到烤箱噢。

西式早餐煎餅

-做出15小片

麵粉 125g 糖 2Tbsp 發粉 2tsp 鹽 1/2tsp 牛奶 1杯 溶化奶油/植物油 2Tbsp 雞蛋 1粒 植物油 1Tbsp 奶油, 蜂蜜, 果醬, 巧克力醬搭配 預熱烤箱200'C. 等下可以把煎餅用鋁箔紙包著, 再放入烤箱保溫。 把麵粉, 糖, 發粉和鹽混合, 備用。 大碗內放入牛奶, 溶化奶油/植物油和雞蛋, 攪拌均勻。 加入乾的材料, 稍微混合即可。 平底鍋開中火, 用紙巾折半, 沾上植物油, 抹在鍋上。 把2-3Tbsp的麵糊放入, 一個大鍋大概可以同時煎2-3個煎餅。 大概煎1-2分鐘, 翻面, 再煎1-2分鐘即可。 放入烤箱保溫, 再繼續煎其它的。 Easy Breakfast Pancake

125g all purpose flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 2 tablespoons unsalted butter, melted, or vegetable oil 1 large egg 1 tablespoon vegetable oil Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.

In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).

Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.

For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet). Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.

BBQ Chicken with Caramelized Onion Tortilla BBQ雞肉墨西哥薄餅

利用BBQ醬來搭配雞肉, 方便得來又好吃, 雞肉塊只需腌制一下子就很入味了。

BBQ雞肉墨西哥薄餅

Tortilla 薄餅 4片 去骨雞胸肉 2片 BBQ 醬 5Tbsp 洋蔥 (切片) 2粒 沙拉菜 雞肉用BBQ醬腌制大概20 分鐘。 鍋內放些油, 放入洋蔥片, 炒至軟, 洋蔥轉褐色後, 可以撈起備用。 鍋內再放入些油, 放入雞塊和剩餘的BBQ醬, 炒至熟, 加入之前炒軟的洋蔥, 翻炒均勻後熄火。 把沙拉菜鋪在薄餅中間, 放上洋蔥雞塊。 先把兩邊稍微向內折, 再從底部向上捲起, 稍微壓扁固定。 平底鍋熱油, 把包好的tortilla放入, 煎到兩面都金黃色即可。

BBQ Chicken with Caramelized Onion Tortilla

4 tortilla wraps 2 boneless chicken breast (cut into pieces) 5Tbsp BBQ sauce 2 onions , sliced Lettuce/salad leaves

Marinate the chicken with BBQ sauce for 20 minutes. Heat oil in pan, put in onion slices, fry till soft, dish them out when they turn brown. Using the same pan, put in some oil, fry the chicken pieces together with the BBQ sauce till cooked. Add in the caramelized onion and mix well. Place lettuce/salad leaves on the center of the tortilla, follow with caramelized onion and chicken . First fold in both of the corner of wrap, then roll up the wrap. Heat the wrap in a frying pan on medium-low heat, till both sides are golden brown in colour. Cut into half to serve. 早餐店的蛋餅 Taiwanese Pork Floss Omelet

記得蛋餅吃得最頻密的時候, 就是在台灣旅遊的日子了。 那裡的典型早餐少不了蛋餅, 而且口味很多, 每天都可以吃到不一樣的, 很不錯。 後來回到這裡, 偶爾會吃下台灣小食店賣的蛋餅, 看他們做的方法不難, 所以我自己在家也有樣學樣, 來做肉鬆蛋餅當早餐!

早餐店的蛋餅

食譜來源:小小米桶

麵糊材料:(直徑26~28公分的蛋餅3個)

高筋麵粉…..8Tbsp 太白粉(樹薯粉或玉米粉)…..2又1/3Tbsp 水…..180ml 鹽…..少許

雞蛋配料:

雞蛋…..3個 蔥花…..適量 水…..每一份蛋餅用1大匙 鹽…..少許

1. 面煳材料拌勻靜置10分鐘,醒面 (我在面煳里 加了一點蔥花進去)

2. 要開始熱鍋煎蛋餅之前, 先把一粒雞蛋加上、1大匙的水、2~3大匙的蔥花、少許鹽,拌勻

3. 鍋熱,抹上薄薄的一層油,將1/3量的面煳倒入鍋中,舉起鍋打圈轉動鍋身,讓面煳自然擴散成圓餅狀

4. 等餅皮微微半透明時,翻面,這時馬上倒入蛋液(蛋液要攤勻)。 想吃酥一點口感的朋友,可在翻面後 於鍋子邊緣,加入少許油, 再晃動鍋身,油就會滑到鍋底,將蛋餅煎成酥酥的。

5. 等蛋呈現凝固狀態.就可以開始放肉鬆, 卷蛋餅了。

6. 卷好,起鍋切小塊,淋上醬油膏或是甜辣醬,即可.

Taiwanese Pork Floss Omelette

- To make 3 omelettes

A

8 Tbsp high protein flour 2 and 1/3Tbsp of corn flour A pinch of salt

3 Eggs Some spring onion 1Tbsp of water for each omelette A pinch of salt

Mix ingredients from A together and leave it for 10 minutes. Mix one egg with 1Tbsp of water, some spring onion and salt. Heat oil in a pan, add in 1/3 of the mixture from A,move the pan to spread them out evenly. When the omellete is half transparent, flip it to cook the other side, and add in the egg mixture. When the egg layer is almost set, add in the pork floss and fold the omelette and cut into pieces to serve. 起司雞肉漢堡包 Simple Chicken and Herb Burger

自己弄得漢堡餡真的與眾不同, 吃了很有滿足感。 而且加了起司和生菜搭配, 讓自己和家人都吃得津津有味。

起司雞肉漢堡包

雞肉碎 400g 大蔥 切碎 半粒 美奶滋 1Tbsp 辣椒粉 1tsp 迷迭香, 奧勒岡切碎 鹽1/2 tsp 生菜, 番茄, 起司片, 黃瓜 把以前上全部材料混合一起, 然後分成四片, 弄成圓型一片, 放入平底鍋煎熟就可以了。 然後把生菜, 雞肉塊, 起司, 番茄和黃瓜分別排入麵包中, 可以放入烤箱烤一下, 讓起司稍微溶化。

Simple Chicken and Herb Burger

400g Ground chicken 1/2 Onion, minced 1Tbsp Mayonnaise 1tsp Paprika powder Fresh Rosemary and Oregano, chopped 1/2tsp salt Cucumber and tomato slice, cheddar cheese slice, lettuce. Thoroughly mix all ingredients and form into 4 patties. Put some oil in a pan, fry the chicken patties till cooked. Serve with burger bun, lettuce, cucumber, tomato and cheddar cheese. You can bake the burger in the oven to get the cheese melted. 幸福滿滿口袋麵包早餐 Bacon and Egg Pita Bread Breakfast

喜歡這樣的口袋麵包, 買回來就可以直接用, 而且變化也很多, 拿來做比薩或者夾雞蛋當早餐也很方便。 這次準備的也算蠻簡單的, 看看冰箱有什麼適合的材料, 再把它們煮熟後, 全部排列好, 又有美味的早餐上桌了。

幸福滿滿口袋麵包早餐

口袋麵包 1個 (切半) 雞蛋 2粒 (加些牛奶/鮮奶油打散, 鍋內放油, 把蛋液倒入, 蛋液差不多辦熟時, 攪拌翻面, 煎好) 培根 2 片(煎熟) 車打起司 2片 (切條狀) 番茄, 沙拉菜 把雞蛋, 培根煮熟後, 和番茄片, 沙拉菜還有起司夾入口袋麵包中。 然後放入烤箱180'C烤大概10分鐘, 或者到起司融化。或則, 我因為懶惰所以沒有用烤箱, 直接放在平底鍋煎一下即可。

Bacon and Egg Pita Bread Breakfast

1 piece of pita bread (cut half) 2 eggs (mix in some milk/ whipping cream, pour into the pan, cook till half-cooked, then stir fry them till cooked) 2 slices of bacon (fry till cooked) 2 slices of cheddar cheese Tomato slices and lettuce Add all the ingredients above into the pita bread. Heat the pita bread in preheated oven at 180『C for 10 minutes or just heat them on a non stick pan

until the cheese melted.

活力早餐與水波蛋 Perfect Pouched Egg on Toast

這個早餐算蠻簡單的, 而且半熟的蛋黃, 可以沾麵包來吃。 步驟很簡單吧, 自己也可以動手在家做。

活力早餐與水波蛋

先把熱狗燙熟, 切半。 麵包塗上奶油, 其中一份鋪上起司片, 再排上熱狗, 放入小型烤箱烤大概10分鐘, 直到起司溶化。 蘑菇切片後, 放入鍋內用中火炒至軟身, 灑上胡椒粉和煙調味即可。 雞蛋1顆 水 600ml 醋 2Tbsp 先把雞蛋打開, 盛入小碗中。 用一小鍋, 以中大火煮水, 開始煮沸, 隨即放下醋, 用湯匙或筷子攪拌, 成一小旋渦, 輕輕把雞蛋倒入, 煮約1.5分鐘, 撈起來, 瀝干水分。 蓋在土司上頭。

Perfect Pouched Egg on Toast

Steam/pan- fry the hotdog till cooked, cut into half. Spread butter on the toast, top with a slice of cheese, and put the hotdog on it, toast in toaster for 10 minutes or until the cheese melts. Heat a little oil in pan, stir fry the mushroom slice till mushrooms become tender. Season with black pepper and salt. Set aside. Egg 1 Water 600ml Vinegar 2 Tbsp Crack the egg into a small bowl. Bring a small pot of water to boil over medium high heat. Add vinegar. Stir with a spoon or chopstick to create a small swirl. Gently pour egg into boiling water. Cook for 1.5minutes. Lift up with strainer and drain. Place the egg on top of the toast to serve.
