Homemade Cendol
自製煎蕊
Ingredients:
100g corn flour 玉蜀黍粉
25g pandan leaves 班蘭葉
500ml water 水
few drops alkaline water 幾滴鹼水
few drops of green colouring 幾滴綠色素 (I omitted this我沒加)
Methods 做法:
1. Wash the pandan leaves, cut it nto small pieces, blend ittogether with water.
1. 班蘭葉洗凈,用剪刀減小,加入水,用攪拌機打爛。
2. Put the corn flour in a mixing bowl/pot. Strain the pandanmixture, press out all the water into the flour and add a few dropsof alkaline water.
2. 薯粉放進鍋里,班蘭汁過濾,水份擠入薯粉中,再加入幾滴鹼水。
3. Cook the mixture over medium heat, stir constantly until thebatter turns thick and translucent.
3. 用中火將混合物煮至濃與半透明。
4. Prepare a bowl of iced water. Put batter on the strainer withbigger holes and press it downwards to drop into the icedwater. (can also use a cendol mould or piping bag to pipeout)
4.準備一鍋冰水,將麵糊放在大孔的過濾網,往下壓,讓條狀掉入冰水裡。(也可用煎蕊模型或放入擠花袋擠出來)
5. Put into the fridge for abouthalf an hour.
5. 放入冰箱冷藏半小時。
6. Strain it before use or keep it in the refrigerator submerged inwater for use later.
6. 瀝干水就可以用了或浸在水裡放入冰箱冷藏,以後使用。
