Vegetarian Cheese Pancake

蔬菜乳酪煎餅

(chinese recipe adapted and modified from Carol's First Book ofNoodles and english recipe translated by bakingtaitai)

Ingredients: (makes 2 big piecesusing 28cm frying pan)

(A) Pancake batter

120g plain flour (I used premium BlueJacket patent flour)

30g wholemeal flour

2 eggs

150g fresh milk

1/4 tsp salt

dash of white pepper

(B) Vegetables *

1/2 potato

1/4 carrot

3 leafs of cabbage

some spring onion (will include next time for a bettertaste)

60g shredded cheddar cheese

*You may adjust the amount of vegetables accordingto your liking.

食材:(28厘米平底鍋約煎2片)

(一) 麵糊材料:

120克 中筋麵粉

30克 全麥麵粉

2粒 雞蛋

150克 牛奶

1/4茶匙 鹽

少許 白鬍椒粉

(二) 蔬菜部份*

1/2 馬鈴薯

1/4 紅蘿蔔

3片 高麗菜

一些青蔥 (家裡沒有,所以沒放,不過放了肯定更好吃)

60克 切達乳酪絲

*蔬菜的材料份量可依照個人的喜好調整。

Directions 步驟:

1. Shred the potatoes, carrots and cabbage. Mix the wholemealflour and plain flour together in a mixing bowl.

1。馬鈴薯和紅蘿蔔刨成細絲, 高麗菜切成絲。中筋麵粉+全麥麵粉放入盆中混合均勻。

2. Add the eggs and milk in, whisk the batter well till noflour is seen. Season with salt and white pepper, then seal withcling wrap for 20 minutes. (Batter can be prepared thenight before, store in fridge after sealing with clingwrap.)

2。將雞蛋及牛奶加入, 用打蛋器攪拌均勻成為無粉粒狀態的麵糊。將鹽及適量白鬍椒粉加入調味, 然後封上保鮮膜放置20分鐘。(可以前一天晚上先準備好, 封上保鮮膜密封放冰箱)

3. Add in the shredded vegetables and cheddar cheese and mixedwell.

3。再依序將適當的蔬菜絲和乳酪絲加入混合均勻。

4. Add some oil into the frying pan, pour half the batter intoit, spread out evenly. Using low heat cook till both sides aregolden.

4。平底鍋中放入適當的油,倒入一半的麵糊攤平。小火煎到雙面金黃即可。
