**金瓜鹹蛋蝦** | Golden Pumpkin Prawns

材料 :

300g中蝦,去殼,留尾

150g南瓜,蒸熟,壓爛

3粒鹹蛋黃,蒸軟,壓蘭

1杯炸油

2大匙牛油

1大匙蒜茸

2條指天椒,切粒

做法 :

1. 燒熱炸油,分3次放入蝦炸熟,撈起瀝干油分。

2. 熱溶牛油,爆香蒜茸,放入南瓜和鹹蛋黃炒香。

3. 最後加入蝦和指天椒炒勻,便可盛起享用。

Golden Pumpkin Prawns

Ingredient :

300g medium-sized prawns, shelled but leave the tail

150g pumpkin, steamed and mashed

3 salted egg yolks, steamed and mashed

1 cup oil for deep-frying

2 tbsp butter

1 tbsp chopped garlic

2 chilly padi, sliced

Method:

1. Heat up oil for deep-frying, deep-fry prawns in 3 batches until cooked. Dish and drain.

2. Melt butter in a wok and saute chopped garlic until aromatic. Add mashed pumpkin, salted egg yolk and stir-fry until fragrant.

3. Lastly add prawns, chilly padi and stir well. Dish up and serve.
